Jay Mikolajevic is the chef and creative force behind J.M. Velvet Knife — an intimate dining experience built on precision, passion, and respect for exceptional ingredients. With a modern approach to fine dining, Jay combines refined technique with bold creativity, delivering a tasting menu that features dishes which are elegant, expressive, and deeply connected to the Scottish landscape. Inspired by the coastline, forests, and seasonal produce of Argyll, the menu focuses heavily on local ingredients, carefully selected at their peak. Every element on the plate is crafted with intention. From delicate textures to balanced flavours and meticulous presentation, precision is at the heart of the experience. Beyond technique, Jay’s deep love for cooking is the driving force behind every dish he creates. His passion for food stems from a desire to bring people together, create unforgettable experiences, and showcase local ingredients in their purest and most exciting form. Cooking for Jay is more than a profession — it is a lifelong dedication to creativity, craftsmanship, hospitality, and the joy of sharing exceptional food with others.
